✨ HighlightGreat place! The line was long and a 90-minute wait. We were able to take a reservation at the time, and they called us. In the meantime, I went shopping with my family. When they called us, we went down the stairs and pre ordered our food and waited in line. Getting into the room, there were small seats to sit in, and a little table with some instructions on it. There were blockers, so you could not see the employees or my family. If you ordered a half boiled salted egg, you get to unwrap it yourself, and the instructions are on a little sheet taped to the table. I decided to get the original tonkutsu ramen with my own decisions for things like stiffness of noodles and if you wanted pork in your ramen. After all this, you get your ramen and take some pictures, and start slurping it down. Loved the ramen with a nice tonkutsu flavor! The egg is super good and easy to slurp and eat while the meat is chewy but easy to eat with and amazing broth and perfect noodles. Got the matcha pudding, which was not the best and too rich for me. The pudding looked good but wasn't my favorite. Overall, the meal was super good, and just the only downfall was the pudding and wait. The employees don't talk much and you don't see their faces. The place is warm and has some hangers for jackets and other clothing. They have a bathroom and there is a lot of toilet paper there which was super funny to me and there was a link that you could visit if you had to use the urgent secret weapon for doing your business.😅😂My second time coming to Ichiran and obviously my favorite too. Although I do not recommend getting the instant ramen because it is a lot worse than the ramen that you eat inside the store and is too salty. Plus, if you do like the ramen even after this warning, you should get it at a convenience store because they are a lot cheaper there.→

We had an opportunity to try this place since we had a gift certificate for their Furusato Nozei course using ingredients from Shiranuka Town in Hokkaido prefecture. The food and service here is Michelin quality. Everything we got, both seafood and meat dishes, were delicious and beautifully prepared. We were also surprised at the amount of deserts that we got. In addition to the palate cleanser and the main dessert, we got another tray of petit four and three out of the four were almost as big as a single dessert. We were definitely full after the meal and were glad that we were walking for almost half a hour after we had left the restaurant. What also sets this restaurant apart is that they bring you a card with the descriptions of each dish as they come out and don’t spend a long time providing an explanation about each dish. While this is a great restaurant, this place is not for everyone. For one thing it is very quiet so it may feel a bit awkward for some people. For example, when we got seated at our table, it took about 15 minutes for us to place our drink orders and then get the drinks because there were only two waitstaff, but it felt a little uncomfortable because it was so quiet and we felt like we couldn’t really talk during those first fifteen minutes. The noise level got better as the night progressed and we got our food, but I would say the restaurant is still pretty quiet compared to average.→

✨ HighlightI visited Ren and Ishikawa in 2016, the experience was exceptional. Since then I have always looked forward to visit Kohaku. Due to the popularity of the establishment, and no travel during 3 years of COVID, there was no chance at all. All of a sudden there was availability at Kohaku in 4 days, I immediately confirmed and booked a flight to Tokyo, making a dedicated trip just for Kohaku. The exterior of the shop looked exactly the same as when I passed by 7 years ago, so no problem to locate it at all. Appetizer is shredded melon and caviar in light creamy sauce. The refreshing and deep flavour wash away the heat of summer and gets you ready for the feast. Then comes the deep fried Ayu fish in creamy mushroom soup. The umami and silkiness of the soup matches perfectly with the lighly crunchy Ayu with deep savory flavour. You can learn a lot about a Japanese restaurant from the quality of it's soup. Needless to say Kohaku's soup is clear and rich without the help of any additional seasoning. The taste of the charcoal grilled conger eel just lingers in your mouth, for a very long time. Sashimi is of course top quality, the uni soy sauce with sesame seasoning completes the tako. Highlight of the dinner is again Ayu fish which is grilled this time, paired with sauce made of deep fried fish bone and fish organ, and sticky rice. Such deconstruction makes you enjoy the fish to the maximum in terms and flavour and texture in great harmony. Deep fried oyster with pepper, yuzu seasoned sauce, turnip and ginger is a successful formula. It strikes me as the classical Cantonese dish oyster in clay pot, but in much more delicate flavour for good sake. The cold noodle has a surprising chewy and al dente texture, all embraced by clear broth with delicate umami flavour. One can open a restaurant with this noodle alone and become a hit. A perfect dinner always ends with a fabulous dessert, which is a coconut mochi this time. What a treat. If you were as lucky as I am you can even buy some back home. Verdict: a seat in Kohaku is definitely worthy for a dedicated trip, from any part of the world. Will strive to visit again.→

✨ HighlightAn Oden restaurant located just outside of the basement shops in the same building. It was closed on a Saturday when we first came, glad to be able to come on the following Tuesday. Food are order from an IPAD all in Japanese. The broth was clear and delicious. The daikon was very soft but still retain certain texture. The tofu and fried tofu were all very nice. The chicken meatballs were very soft. The squid was a bit tough. There was a large group in a private room having some kind of party talking and laughing loudly when we visited, Overall it was a great Oden meal for us.→
