Tra Que vegetable village
A few hectares of market gardens between Hoi An and the beach, farmed with river weed dredged from the neighbouring lagoon as the only fertiliser, which is what the herbs here are known for. Visits usually involve doing the work: raking beds, planting, watering with the traditional twin cans on a shoulder pole, then eating what the kitchen makes of it.
Worth knowing: It is real farm work in an open field. Hats and sunscreen matter more here than at most stops.
Cooking classes
Most classes here start before the kitchen: at the market choosing herbs, or in the gardens at Tra Que picking them. Then a handful of dishes you can actually reproduce (usually a rice-paper roll, a pancake, a broth), cooked on your own station and eaten as lunch.
Worth knowing: Say in advance if anyone is vegetarian or has an allergy; fish sauce is in nearly everything by default.

- Meeting point in Hoi An city: 429A Cua Dai St, Hoi An. Meeting point in Da Nang city: 14 An Nhon 10 St, Son Tra.
