We visited Alcalde, the fine dining gem run by Eduardo Torres, whose impressive journey includes experiences at Michelin-starred restaurants like El Celler de Can Roca. Even without Michelin in Guadalajara, Alcalde’s well-deserved spot among the No.37 Latin America's 50 Best Restaurants 2023 is a testament to its excellence. The tequila and wine pairings and the tasting menu were impeccable, elevating the entire dining experience, and the server who explained everything in English was incredibly kind and knowledgeable. If Michelin ever comes to Guadalajara, this restaurant would easily be a match for any of the best. Every detail commanded respect, and I was especially blown away by the incredible flavor of the mezcal worm dish — a true awakening for the taste buds! 😍👏👍
Tasting menu at the chef's table was a great experience and I thoroughly enjoyed being able to watch all of the beautiful food come together in the kitchen. The vibes were great and the food wasn't bad. Definitely had some very unique flavors and delicious bites throughout the tasting menu. All of the dishes were visually stunning. The wine pairing left something to be desired though. The pours were quite light, and they reused the same wine for consecutive courses and a couple occasions which was a little disappointing.
After a week in Guadalajara, I can honestly say this was the only average meal I had all week. Unfortunately, it was also the most expensive. The food wasn’t bad, but several courses just lacked flavor. The cocktails were very good and a nice offering of tequila. Skip the wine pairing. The wines are not very good. I am not trying to be overly harsh, but we had better meals at octa, BRUNA and allium. Half the price (much less than half) and a way better meal. I assume Alcalde is trying for a star, but I think that is far away. Again, ok food, good service and nice atmosphere, but not worth the cost. Would not go back.
Top notch fusion cuisine. Classical plates such as the aguachile are simply incredible, but this time a couple of the options we asked had kimchi and oriental flavors which I was not impressed with. Service was ok and the wine list contains a great selection.
