The Couvent des Jacobins is a stunning example of Southern Gothic architecture, built from the characteristic pink brick of Toulouse. This former Dominican monastery features a remarkable church with a nave divided by a central column that branches into ribs resembling a palm tree, hence the name 'palm tree' vault.
