My first Michelin omakase experience began at Sushi Jin. The hostess kindly assisted us in savoring the flavors properly, and the chef thoroughly explained the origins and details of the ingredients, allowing us to comfortably enjoy the food. The seasoning of the dishes was neither lacking nor excessive, making it perfect for tasting the flavors of the fish. Each menu item had a special taste, but the top-grade uni had an unprecedented texture and sweetness, and the bluefin tuna melted in the mouth like butter. I was grateful for the chance to taste even the homemade ginger pickles, which were made with great care. It’s a pity that I can only give it five stars. From Waterloo
Fish quality was on par with 2 Michelin star level in the U.S. The cleanest Uni I’ve ever had. They had unique and simple touches that worked well, such as putting shiso flowers in the Ikura. Best of all, they use Kama Toro instead of Otoro — the rarest part inder the collar of the bluefin. It’s extremely fatty yet delightfully firm. That piece alone was worth the premium over the $200 places. Also appreciate that they often give you the slices on the ends that they can’t use for nigiri (because the shape is not optimal). Would come back for sure.
Sushi Jin is the best omakase I've ever had in Vancouver. Chef Jin offers a refreshing take on the traditional omakase experience. It’s perfect for those looking to explore new flavor combinations. I would highly recommend it for food lovers seeking a unique dining adventure.
Chef Jin was amazing! His omakase was so unique and the fish was so fresh. Great attitude, service and omakase. Would definitely recommend coming here. He had a few special omakase dishes that I've never tasted at other omakases before, and his use of olive oil was very special. The lobster caviar sashimi and sea perch dishes were so good.
