The Convent of San Pablo is a former Dominican convent dating back to the 16th century, dramatically situated on the edge of the Huécar gorge. After years of abandonment, it was meticulously restored and transformed into a luxurious Parador hotel, offering guests a unique blend of history and modern comfort. Even if you're not staying overnight, you can visit for a meal or a drink on the terrace, which provides one of the most spectacular views in Cuenca, looking across the gorge to the Hanging Houses and the old town.
