Chouara Tannery is a sprawling leather workshop in the heart of Fes el Bali, operating since medieval times. From surrounding terraces, visitors watch workers treat hides in circular stone vats filled with vibrant dyes, yellow from saffron, red from poppy, blue from indigo. The pungent smell of pigeon droppings (used for softening) is unmistakable. After viewing, nearby shops sell finished leather goods.
