✨ HighlightI could describe our experience at Jam with so many words like flawless, succulent, professional and above all, refined while remaining simple, but I can't stop there: it was one of the warmest welcome we've had in São Paulo not to mention they let us stay way after closing hours while tending to our every need. The menu matches fine Japanese gastronomy; the quality of the produce are unmatched and the dishes are impeccable (you have to try the crispy salmon skin sushi rolls!). Always a smile when serving and above all, quick execution without fuss, (we spoke very little Portuguese) and without falling into the cliché of the waiter waiting to fill the slightest glass immediately. There is experience and a lot of accuracy in this charming restaurant, from the door man, the waiters to the manager of this establishment which, to me, makes it part of the pride of São Paulo! I had a sushi roll and sashimi and the fish tasted so fresh. The chocolate mousse was to die for! Obviously the view was breathtaking. My only complain is that if you ordered a drink while having half of your current drink left, once they brought the new one they would remove your half empty glass so be sure you stop them before they do so. As the only Asian guest and a sushi enthusiast, I have a few small suggestions: Sushi Rice Tasting: The rice tasting is unique, but since all the rice comes from the same pot, the impact is limited. It’s a nice touch, but I recommend clearing the spoons afterward. Sushi Serving Style: The chef serves 5-6 pieces of sushi at once, but I think serving one piece at a time would enhance the experience and preserve the sushi’s quality. Customization: It’s hard to customize the rice for each guest, but asking guests about their preferred wasabi level after the first piece would be a nice touch. Menu Balance: For a 16-course omakase, most dishes are sushi or rolls. Adding 3-4 more appetizers would provide a better balance. Lastly, since the chef encourages eating with hands, I suggest providing dedicated wet wipes for cleaning hands, rather than the towel. Thanks again for the wonderful experience!→
