Cantillon Brewery is a living museum of traditional lambic beer production, located in the heart of Brussels. Founded in 1900, it remains family-run and dedicated to spontaneous fermentation, a method that relies on wild yeasts from the Senne Valley. Visitors can take a self-guided tour through the brewhouse, coolship room, and cellars, where wooden barrels age the beer for up to three years. The tour ends with a tasting of Cantillon's classic lambics, gueuzes, and krieks.
