St Nicholas Abbey is a beautifully preserved Jacobean mansion from the 1650s, one of only three in the Western Hemisphere. Visitors tour the Great House with its period furnishings and then see the on-site rum distillery, where sugar cane is crushed and fermented. The highlight is sampling rare, pot-still rums aged in oak barrels. The lush gardens and original coral-stone buildings make this a vivid step into Barbados' colonial past.
