We recently visited Brasserie Uno in Zermatt, and while the staff were polite, the overall experience was disappointing. The main issue was the food—it was entirely tasteless and far from what you’d expect for the price. The restaurant emphasizes its commitment to “wasteless” cooking, which is admirable in theory, but they urgently need to focus on improving the flavors to ensure they’re not just wasting their clients’ money. Another concerning aspect is how reservations are handled. Once you reserve, you are locked into paying €170+ per person, regardless of the quality of the experience. It feels more like a trap than a proper dining arrangement. The concept is intriguing, but the execution leaves much to be desired.
My wife and I are expats who live in Zurich and we came to Zermatt for a ski holiday with my in-laws. This was their first Michelin star experience. What an experience it was. The atmosphere was intimate yet somehow spacious. The staff, incredible. They were friendly, engaging, humorous; and most importantly, knowledgeable. The head chef visited every table for each course and the make-shift sommelier was such a pleasure to chat with. The food itself was an inviting adventure. What a journey Chef captained. My favorite dish were the tacos. A 48 hour cooked beef that took you to the heart of Mexico City. And for a Chicagoan who doesn’t experience Mexican food so often in Europe (let alone Switzerland), this was a real treat. The wine pairing was completely perfect and taught us something new about pairings and the wine’s ability to really complement a dish. Yes, an expensive(!) and luxurious meal, but one of the finest I’ve have the pleasure of enjoying.
Their system made and an error and booked my party on the wrong date and the restaurant proceeded to charge me $772 for a no show. I booked this as a birthday dinner (I.e. a very distinct date) and shared the date/time, number to call, and instructions to change the reservation for my group (just in case). They did not call or text to confirm, simply sent an automated reminder email to justify the booking and charge (which was missed because we were on a ski holiday). The restaurant manager was extremely rude and made no attempt to accommodate. I tried to find a date in the future to reschedule (even asked openly what is the next available date was after being shot down when I provided suggested dates) and the restaurant manger simply said “there is no availability”. Clearly I was not welcomed. No service recovery was offered, no accommodation for a future reservation was made, simply a firm message that I will be charged $772 for a dinner I never experienced because the meal was already prepared (this was a 3 hour tasting and they said all the food was already made and it would be thrown in the trash). This is not Michelin star service. They do not deserve their star after the rude, unaccommodating, and non-proactive experience they provided. Given how stern and quick to defend their cancellation policy and fees the restaurant manager was, I assume this establishment has encountered this situation before. The right thing to do was to recognize your guests’ needs, offer to accommodate, and recover services. I walked away feeling robbed, unseen, and completely violated by a team that was more interested in taking my money vs. doing the right thing and providing Michelin star service. Where was the text or call to confirm the reservation? Where was your service mindset and empathy? Where was the anticipation of needs and the propensity to delight? I have lost faith in the Michelin star rating system after this. You have corrupted the entire institution by getting away with this.
One of the best meals we have ever had! We traveled to Zermatt as a family of four (with our two children - 17 & 20). Brasserie Uno is a very special dining experience and worth the expense! The service is warm and welcoming. The decor is cozy and beautifully put together. The service is friendly and informative - we left feeling like we dined with friends. The food is exciting and interesting and uses flavors from many cultures. We truly loved each course! The chef visited our table a number of times. The restaurant’s philosophy is environmentally thoughtful in a very smart way. Brasserie Uno strikes a lovely and unique balance of providing extremely elevated food while making you feel so at ease and comfortable.
